Chef Neil Kearns’ Classic Beef Wellington
Seasoned and seared “AAA” Canadian Beef with Cremimi mushroom duxelles, wrapped in flaky pastry served with Merlot reduction and seasonal vegetables.
Paired with Dames Red. A beautiful BC blend of 70% Merlot and 30% organic Syrah. Deep crimson with a burgundy hue, with rich vanilla-infused mulled berry aromas joined by bright red cherry juice and a toasty star anise spicy note.
